This Easter special Rocky Road is great for after a Sunday lunch. A special treat for the kids and something delicious for the parents also. If it is for the kids, play a little game of guessing how many easter eggs, MnM’s and Clinkers they got in their Rocky Eggs Road.
- 1 cup of peanut MnM’s
Grease a 6cm-deep square cake pan. Line the base and sides of pan with baking paper.
Melt chocolate, stirring regularly to ensure it doesn’t burn.
Place 1 cup of marshmallows, MnM’s, cranberries, clinkers, biscuits and half the Easter eggs in a bowl. Add chocolate. Stir gently to combine. Spoon mixture into prepared pan and compress with the back of a spoon. Lightly scatter and press the remaining eggs and marshmallows into the top of the rocky road.
Cover with glad wrap and refrigerate overnight.
Cut into pieces and serve.
